Raw Coconut Corn Chowder


I was wondering what it would take to bring me back to this blog. Today I made a raw coconut corn chowder so delicious I just had to share.

Raw Coconut Corn Chowder
1 serving
1 cup unsweetened almond milk
1/4 cup lite coconut milk
corn kernels from 2 corn cobs
1/2 avocado
1/2 chopped roma tomato
salt, pepper & fresh lime juice to taste
chopped fresh basil

Set aside a handful of corn kernels. Add milks, corn and avocado to the blender and blend until smooth. Add salt, pepper and lime juice. Garnish with corn kernels, tomato and basil. Enjoy!
